When people think of Arizona Chili Spices they inevitably think of heat. They probably think of rustic foods prepared for a cook off that is designed to be as hot as possible. The most popular form of pepper is jalapeno. As well as being an addition to a chili these are often served stuffed with cream cheese. Slicing these green peppers and adding to the mix will add a good extra hit of heat without being excessively hot. The birds eye is also a good example of one that can be added to provide additional kick.

Of course if you do want a recipe that is properly hot there are options too. Red Amazon is an example of a hotter variety. These are a dried version of Tabasco and so may be best used to top off at the end or stirred in to make it a little bit hotter towards the end.

There are numerous recipes available online, each recommending a different mixture of spices. Whether you are making one that is very hot or mild you always need to consider the flavour of what you are adding. This is something you can learn over the course of your cooking.
